2022 Draft Menu

Enough of the smokescreen talk....let's get down to brass tacks. What's on your menu tomorrow?

At Chateau MB:

-75 wings
-Buffalo chicken/blues cheese dip w/ tortilla chips
- taco Supremes from taco bell
- donuts

I've actually got a couple of friends coming over for dinner tomorrow, although not for the draft. So I'm making spring rolls, larb two ways (vegan and chicken), jasmine rice, and a couple of sauce (sweet chilli and an extra hot sambal olek).

As an Englishman that's way, way funnier. ("Brass" is slang for a hooker, so "brass tax" on draft night would be the amount you're paying to get your nuts drained while watching a bunch of young guys in suits become millionaires.)

Larb is outstanding food, and super easy to make. It's basically just ground meat fried with spices and finished with herbs and citrus. When you're doing it for a few people it works really well to just cook the protein with the simple flavours (lemongrass, garlic, ginger/galangal, lime, fish sauce) and then serve with a couple of sauces of varying heat and a couple of serving options. That way everyone can choose how hot to have it, and whether to do it in lettuce wraps or with rice. You could probably even go full fusion with tortillas and some simple leaves, although I haven't. It's really just a Thai version of a taco after all.

Do you do the pig ears or is that just a specific version of larb?

They had pig ear skewers at the Queens Night Market the other day but I chose the pig intestine and chicken liver instead.

Yeah, I have Friday off so I'll put together something more interesting then since I'll have time. Thursday is just beer and whatever my wife makes for dinner. Probably baked ziti.

I have never heard of that and have definitely never done it. I would be willing to try it but not when my wife's around.

I have been working everyday into the early morning for the past 4-5 weeks.  Tomorrow at 330pm Mark's the end of my suffering (perfect timing) and the start of my drinking and gorging.
