but so many people seem to judge pizza quality based on its ability to clog their arteries.

Whoever created that cheesy crust pizza nonsense should be shot.

My wife's family are from rural Ontario and they have this pizza place they rave about. They say it's the best pizza I'll ever have and I don't know what I'm missing. I finally tried it a little while back and it was truly disgusting - an inch of bread, the same amount of cheese and enough pepperoni to give a small elephant a heart attack. They literally judge a pizza on the quantity of cheese and toppings.

It astonishes me that people fail to understand the fundamentals of what is one of the most simple dishes out there; it's about the balance of bread, sauce and cheese being just right. Of course each element has to be executed well to elevate it into being a properly good pizza, but so many people seem to judge pizza quality based on its ability to clog their arteries.
It’s all about the water and the sauce. The quality of the cheese helps too but those are the 2 most important characteristics of a good pizza.

It’s all about the water

I've heard that theory, but it's clearly not the case.

Clearly not?

The Midwest and the Northeast have some of the best tap water in the country and, not coincidentally, some of the best pizza (and bread products) too. Let’s hear your theory on why it’s not.

What was that place in Manhattan we went a few tailgates ago? That was the best pizza I’ve ever had.
My dad always says he's undefeated at tailgating

Maybe it's not I who doesn't know what he's talking about

For a start, that's a highly subjective opinion. For a second, your example is utterly without any control for countless other considerations.

The only hope of good pizza near me is either to find some legit Italians with a restaurant or some place that mixes really good stuff on a pizza that tastes so good that you don't care that it isn't really pizza anymore.

That or get obliterated drunk, then anything is good.

I'm sorry, I try to not be right on occasion just to make you feel better about yourself. This ain't one of them though. Seriously, it's a garbage theory that makes no sense. The mineral content of the water used to make the dough has no discernible impact upon the quality of a damn pizza. Give your head a shake.

Here, I even looked it up on Google for you. It's not lab conditions, but it's a pretty good looking test.
